My name is Anu, and I have been hosting Sheila’s Indian Kitchen cooking classes since 2011. I am from India, born in a city called Gwalior which is 100 kms from the Taj Mahal. I grew up in a big family where family functions, wedding ceremonies, religious and non-religious functions go on all year around and where food is a big thing.
I have a good knowledge of all kinds of North Indian food and use of spices and their benefits in every day life based on my Mum’s authentic cooking and so I have named my classes after her (Sheila).
North Indians prefer Indian breads over rice, stuffed parathas (flaky Indian bread with different kinds of vegetables). Rice is also popular and made into elaborate pulaos (pilafs). Indian cuisine has unique, interesting and strong flavours derived from spices, seasonings and nutritious ingredients such as leafy vegetables, grains, fruits, and legumes. Important spices and ingredients from the region are coriander, cumin, dry red chillies, turmeric, chilli powder, cardamom, cinnamon, cloves, garam masala, aniseed/fennel, etc.
I have taught people from all walks of life – opening their taste buds to the possibilities of Indian cooking so that they will be able to cook any recipe.
